Chicken Stock Recipe
Chicken stock recipe is very handy to make a good base for any chicken soup. This homemade chicken stock can be prepared in advance and refrigerated for 4-5 days or in the freezer for up to 3 months. It is very easy to make. You don't have to make special efforts to make a chicken stock. Whenever you have any spare chicken bones or carcasses available (cooked or uncooked), then is a good time to make this stock. To make about 2 liters of stock you will need - 4 lt water
- 1 Kg of Chicken (carcasses, bones, pieces..)
- 3 Onions (quartered)
- 3-4 cloves of Garlic (crushed)
- 3-4 Carrots (cut in big chunks)
- 1 Bouquet Garni
To make the Bouquet Garni you need - 3-4 sprigs of thyme
- 5-6 stalks of Fresh Coriander
- 5-6 stalks of Parsley
- 1 Bay leaf
- 1/4 of a star anise
- 2 Cloves
- 3-4 Crushed Peppercorns
In a sauce pan add the chicken and the onions. Cook them till the chicken and onions get brown. Now add the water, carrots, garlic and the bouquet garni. Bring it to a boil, half cover and simmer for 2 hours. Strain and leave to cool. Remove any fat from the top and discard. Use the stock as required.
