Medhu vada recipe
Medhu vada is a famous South Indian breakfast or snack food. It is eaten hot with a coconut chutney. It is made from ground soaked urad dal (black gram dal) and deep fried. Ingredients: 2 cups black gram (urad dal) 4 green Chilies (or to taste, chopped) 1 Onion (chopped) A pinch of asafoetida (hing) 8-10 Curry leaves (chopped) Salt to tasteOil for frying
Soak dal in water for 6-8 hours, strain and grind using very little water (1 -2 tbsp only) to a smooth paste. Add chopped green chilies, onions, asafoetida, salt and curry leaves to this dal and mix well. If the mixture is too thick then add 1tbsp of water at a time and mix. Heat oil for frying in a kadai. Wet your hands and pick a small portion of the dal and flatten it on your palm. Make a small hole in between that ball by using your fore finger. Slip this carefully in hot oil. Fry 3-4 at a time, on a medium heat till golden brown. Serve hot with a coconut chutney. Depending on the size it will make 15 vadas. Recipe contributed by Gomthi from Chennai (India)
