Vegetable Salad Recipe
This Vegetable Salad is a bit like a Russian salad, with a few more ingredients. Also, if instead of using the cream dressing, you use the healthy mayonnaise, then this salad becomes lower in calories. To prepare this salad recipe you will need the following - 1 Big Carrot (peeled, chopped and steamed)
- 2 Potatoes (boiled, peeled and chopped)
- 1 Cup of boiled peas
- 1 Small Pineapple (chopped)
- 1 Cup Pomegranate seeds
- 1 Cup Sweet corn kernels
All the ingredients should be at room temperature. Put them all in a big bowl. Mix together with a wooden spoon. Choose a dressing from below. Add it in one spoon at a time and mix, till all the ingredients are coated well. Refrigerate and eat it cold. Dressing 1 - 4-5 Tbsp mayonnaise (ready made)
- ½ Cup of cream
- 1 Tsp English mustard
- 1 Tsp Dijon mustard
- Salt and pepper to taste
Put all ingredients in a bowl and mix well. Dressing 2 You can choose this
Healthy Mayonnaise
instead. This will make your salad taste just as good but will be much lower in calories. Note:-Dice the carrots, potatoes and pineapple in the same size and shape(more or less), to give the salad a uniform look. If using a healthy mayonnaise as dressing, please don't leave the salad sitting for too long, as the pineapple will react with the yogurt, making the salad taste slightly bitter. Oops!! To avoid this add the dressing just before eating the salad.
